This coffee is crafted with care by Rosimeire Aparecida Guerra at Sitio Vargem Grande, located in the lush Mantiqueira region of Minas Gerais, Brazil. Since acquiring the farm in 2009, Rosimeire and her husband, Carlos, have focused on producing exceptional coffee, planting red and yellow Catuai varieties on their 3-hectare property at elevations between 1,100 and 1,400 meters. Their dedication to quality has been evident since we began collaborating with them in 2019. Rooted in a family tradition of coffee cultivation, Rosimeire and Carlos balance heritage with innovation, experimenting with processing methods to elevate their coffee.

Harvest and Processing
The cherries for this lot were carefully hand-picked during the harvest season, which peaks in July. Processed as a natural, the coffee undergoes meticulous fermentation, with sugar content (Brics), temperature (kept under 38°C), and pH levels closely monitored. Drying takes place in a controlled drying box, ensuring consistent and vibrant flavor development. This dedication to precision and quality reflects the family's passion for coffee, making Sitio Vargem Grande a standout in Brazilian specialty coffee.
