Shout glory and rejoice for three days, Cascara is back!
But that was a chore! As soon as the European Union issued an approving resolution for the sale of cascara, roasters flocked to the already greatly reduced supply like birds for crumbs.
We did not want to offer you either old harvests or quality that would not satisfy our taste buds, but now we can proudly announce that cascara is returning to our offer.
Our chosen cascara comes from natural coffee processed in Hacienda Sonora. After selective hand picking, the ripe cherries are washed in clean water and then laid out to dry either on African beds or on patios where they are turned frequently to promote even drying. After drying, the coffee is stored for 2 months before being husked in a dry mill on the farm. The dried skins are removed and preserved as cascara.
Hacienda Sonora is located at the foot of the Poás volcano. The farm runs on 100% renewable energy generated by a hydro electric generator that converts the flow of the river into energy. The farm and its mill cover approximately 100 hectares. Of this, 45 hectares are dedicated to the shaded coffee plantation area. The coffee plantations are surrounded by exotic trees and other native vegetation. This biodiversity promotes soil health and maintains nutrient-rich soil that helps grow juicy, delicious cherries.
Expect notes of rosehip tea, rhubarb and the sweetness of ripe cherries in the infusion made from these coffee husks, which you will surely enjoy whether in warm or cold form.
